As IF I don't have a cookie recipe up here yet! I've been working on this one for a while and finally got the stamp of approval from my partner in crime. We do disagree on one thing though... I'm an everything-but-the-kitchen-sink cookie kinda girl and he is a total purist. So while this recipe calls for walnuts and raisins along with the chocolate chips, you can feel free to sub or omit as you wish—a cookie should always be about everything you love and nothin' you don't. 



2 cups blanched almond flour (the Honeyville version, JK Gourmet or are all great)

1/4 teaspoon baking soda

1/2 tsp sea salt (I like my cookies salty/sweet, if you don't you can go lighter on the salt)

1 tbsp Great Lakes Gelatin - you can try without this but I found it gave a nice texture and added protein!! 

1 tsp pure vanilla extract

1/3 cup honey

6 tbsp melted unrefined virgin coconut oil 

3/4 cup mixture of raisins, chopped nuts and dark chocolate chips (I used a 70% soy-free brand) 


Preheat oven to 350. Mix dry ingredients in a bowl, sifting until finely blended. In a separate bowl mix wet ingredients. Pour wet into dry and then add fruit/nut/chocolate mixture. Roll dough into tbsp-sized balls and press flat onto an ungreased cookie sheet. Bake in middle of oven for approx. 10 minutes or until lightly browned. Cool on a cookie rack and serve with a glass of homemade almond milk:)  

Makes approx. 22 cookies
