I've been eating this dish for as long as I can remember—it's one of those comfort meals that mom used to make, that my roommates saw me eating and started making at school, and it's now become one of my husband's favorites too. It's a simple one-pan meal that's idiot-proof and easily adaptable for whatever you have in your kitchen. Enjoy!



5 Raw Italian Sausages—spicy if you like ( I used chicken)—chopped in 4 pieces each

1 Green pepper, chopped in squares

1 Red pepper, chopped in squares

1 Yellow onion, chopped in squares

2 Sweet potatoes chopped in, you guessed it, squares! (You could use white/yellow potatoes if you'd like)

1/4 cup olive oil

2 teaspoons of Italian seasoning blend - I use a salt free blend

1/2 teaspoon chile powder (optional)


Add all vegetables, oil and spices into a bowl and mix well. Add sausage pieces and coat. Line a 9x13 pan with tinfoil and add the mixture to the pan. Bake at 375 for an hour and serve with a side of your favorite mustard. Mine is this one!
