My two-ingredient Pan-Crepes are great, but this morning I was feeling experimental and in the mood for a heartier Sunday Stack... these guys did the trick; deliciously. A dash of coconut flour, baking soda, cinnamon and some optional add-ins is all the tweaking that the original needed—still super easy and ready in a flash.
2 medium-sized bananas
2 tsp coconut flour
1/2 tsp baking soda
1 tsp vanilla
1 tsp cinnamon
pinch of sea salt
Berries, Nuts and Maple Syrup (or whatever you desire!) to garnish
Add all ingredients to a blender, blend on high until light and frothy. Add a little coconut oil (solid or spray) to a fry pan and cook on medium until ready to flip. Keep warm in the oven until the batter is all used up, that way you can enjoy in one gigantic stack. Garnish and Dig in!
