I feel like every family has a wild and wacky tuna salad—something with ingredients that should SO not go together but somehow co-exist in perfectly-delicious harmony. Last night I was flying solo, and with no handsome dishwasher handy I was looking for something quick and easy for dinner that would require little-to-no cleanup. What better time to start creating my own family recipe?! Here's my first try... would love to hear your family recipe, give me a shout!

tuna-salad

Ingredients:

2 cans of white albacore tuna (water packed)

2 tbsp mayo (preferably olive-oil based or homemade)

2 tbsp mustard of your choice (I used German)

Juice of 1/2 lemon

1 celery stalk, chopped

1/2 red pepper, chopped into squares

1/2 apple, chopped

2 tbsp fresh parsley, chopped

Freshly ground pepper and good sea salt to taste

Method:

Scoop tuna into a mixing bowl and squeeze the lemon over top. Add mayo and mustard and mix gently. Add all chopped ingredients and mix well. Serves 2 as a main.

You could serve this on a bed of arugula or other lettuce, in lettuce wraps as a carb-free sandwich or toast some paleo or gluten-free rice bread.
