Not gonna lie, I'm pretty proud of this one. An easy and often used trick for mimicking rice is to chop up cauliflower to a rice-like texture in the Cuisinart, and for good reason—it's delicious. I adapted this recipe from one of my favourite Paleo recipe sites, Nom Nom Paleo. If you haven't checked out Michelle's blog you are definitely missing out—her meat recipes in particular are pretty much out of this world. She got me into using chicken thighs for a lot of my chicken dishes and I silently thank her every time I bite into the melt-in-your-mouth meat. But enough of that, back to this sriracha-topped little bowl of heaven...

Ingredients:

4 slices of cooked turkey bacon, cut up into 1/4-inch pieces

1 medium cauliflower head, cut into a bunch of uniform pieces

2 large eggs

Sea salt

Freshly ground black pepper

2 tablespoons ghee or grass-fed butter

1 small yellow onion, minced

1 cup cremini mushrooms, thinly sliced

1.5 inch piece fresh ginger, peeled and finely grated 

2 tablespoons coconut aminos

1 teaspoon apple cider vinegar

1 teaspoon fish sauce

2 scallions, thinly sliced - discard the ends

2 tablespoons chopped fresh cilantro

Method:

Toss the cauliflower into a food processor, and pulse until it’s the size of rice grains—this might need to be done in batches, and don't overdo it. Put aside. In a small bowl, whisk the eggs and pour into a large, greased skillet, frying up a thin egg omelet. Remove the omelet from the pan, slice it into ribbons, and put aside. Melt the ghee in the skillet over medium-high heat, and add the onions along with a sprinkle of salt. Once the onions are soft and translucent, about 5 minutes, throw in the sliced mushrooms. When the mushrooms are browned, add the grated ginger and stir for 30 seconds to incorporate. Add the cauliflower “rice,” and mix the ingredients together. Place a lid on the skillet, turn the heat down to low, and cook for about 5 minutes. The “rice” is ready when it’s tender but not mushy. Season with the coconut aminos, vinegar, fish sauce and salt and pepper to taste. Before serving, mix in the scallions, cilantro, omelet slices, and the turkey bacon and top with spicy sriracha!
