Such an addictive snack and so amazingly easy to make. A drizzle of olive oil, squeeze of lemon, bake and you're done! Bring a bag to work as an afternoon snack or throw them in a bowl for movie night—you'll be SO proud of your healthy self;)

Ingredients:

2-3 cups of chopped Lacinto or Dino Kale, stems removed. 

Juice of 1/2 lemon

1 tbsp good olive oil

sea salt for seasoning

Method:

Wash and dry your kale really well. Cut the kale along the stem (throw away the stem) and chop into medium-sized squares. In a bowl, drizzle with olive oil and lemon and massage in... get in there with your hands and give the kale a good rub. Spread out on a parchment lined baking sheet (2 batches) and bake at 400 for 15 minutes or so, or until crispy. Let cool and toss with sea salt.

I make mine in batches to eat right away—they don't stand a chance:) But if you want to put them away for tomorrow (they often get soggy) try storing them on a bed of dry rice to absorb the moisture. I haven't tried it but I hear it works for some!
