I had a crazy chocolate craving last night, so at 10pm I did what every normal person would do, I whipped up a brand new chocolate cake-meets-brownie recipe and literally counted the seconds before it was cool enough to devour. I created this recipe knowing I wouldn't be able to control myself, so I tried to use as little sweetener as possible and the healthiest of oils (coconut, of course). Raw cacao powder gave a rich chocolate flavour without the refined sugar and maple syrup added the touch of sweetness I was looking for. SO basically what this means is you can eat a big square with absolutely no guilt. Want it for breakfast? DO IT. I served mine with a scoop of Naked Coconut from Coconut Bliss.
1/2 cup coconut flour
1/2 cup unsweetened raw cacao powder
1/2 cup maple syrup
1/2 tbsp vanilla
4 eggs (room temperature)
1/2 tsp sea salt
1/2 tsp baking soda
6 tbsp unrefined coconut oil, melted (you could use butter if you'd like!)
3 tbsp coconut or almond milk
1/3 cup chopped walnuts (optional)
Preheat oven to 350. In a bowl, whisk together all dry ingredients. In another bowl whisk together all wet ingredients. Pour wet into dry and mix well. Fold in walnuts and pour into a parchment-lined square 8" bake pan. Bake for 25-30 minutes, until a toothpick comes out clean.
