Chilly yet? Punxsutawney Phil saw his damn shadow so here's a little something I'm cooking up to warm us while we wait. It's a stick-to-your-ribs breakfast that gives you that cozy feeling...
3/4 cup raw walnuts
1/2 cup unsweetened shredded coconut
1/4 cup raw pumpkin seeds
2 tbsp chia seed
1 tbsp ground flax
1/2 tbsp cinnamon
1 tsp raw cacao powder
pinch of sea salt
- Makes approx. 4 servings
In a food processor, chop all together until it forms a mealy consistency. Scoop out 1/3 cup into a bowl and mix with boiling water (just like you used to do with those packets of quaker instant cereal) or, even better, some hot almond or coconut milk!
I used a handful of fresh organic blueberries and pomegranate seeds, which I've been having every morning lately—they're full of fibre and vitamin C and have powerful antioxidant properties. I added some raw sprouted almonds for crunch, a little almond milk on top and an extra sprinkle of cinnamon, but you can top with whatever you'd like... raisins, sliced bananas and a drizzle of maple syrup would be great too.
