I'm a coco-nut and I'm on a coco-roll:) A good friend of mine has been eating this stuff by the spoonful and kindly asked that a recipe be posted so that everyone would try it and she could share her intense love for the stuff, so here goes! 1 8oz bag of organic unsweetened shredded coconut (do NOT use sweetened or low-fat, it won't work plus it's laden with white sugar)

1 tbsp organic unrefined coconut oil

1 tbsp real vanilla or almond extract (optional)


Add the shredded coconut to a Vitamix or your food processor and blend until it starts to paste, scraping the sides as you go. Add vanilla or almond extract if desired and oil and blend again, constantly scraping the sides, until you get a creamy consistency. Depending on your climate and your blender this could take anywhere from 3 (Vitamix) to 25 minutes. One word of warning, I would NOT put your Vitamix on the high setting unless you're making a double batch - it overheats and can ruin the batch. If you do find your mixer to be getting hot, turn it off and let cool for a couple minutes before starting again.

Transfer to a lidded jar and keep in the cupboard (no need for refrigeration) for months!
