I'm granola obsessed. I love the texture and the crunch and the little hint of sweet you get when you get a bite of dried fruit. When I first started the paleo diet, crunchiness was something that was seriously lacking and it was actually this problem that helped lead to the creation of my no-grain Nola bars. I've got a great recipe for grain-free granola that I'll post someday soon but when I just don't have the time, there are a couple of raw, vegan, store-bought brands that I reach for. They both have buckwheat—a fruit seed, NOT a grain—which isn't strictly paleo but is gluten-free, grain-free, full of fibre and an easy to digest food that's loaded with a lot of great nutrients.
3/4 cup of non-dairy plain coconut milk yogurt. In the US I buy this one by Coconut Grove at Whole Foods and in Canada I LOVE the Yoso brand. I am not a fan of So Delicious and find it has ingredients that really upset my stomach.
1 handful of fresh organic blueberries - antioxidant superfood and a low glycemic choice
1/4 cup of pomegranate seeds - high in antioxidants, vitamin c and B5, which helps prevent insulin resistance
1 tsp of cinnamon - a great metabolism booster!
