Soft and crispy all at once, the perfect amount of salt and sweet, and the ideal vehicle for dunking... oh, and totally healthy. Sold? Pick up a bag of organic carrots tonight and get these babies in. your. belly! 

 Ingredients:

  • 4 Organic carrots (duh), sliced into skinny sticks, about 2.5 inches long
  • 1 tbsp extra virgin olive oil 
  • sea salt and ground pepper to taste

Method:

Preheat your oven to 450ºF.  Cover a large baking sheet with parchment paper. Slice the carrots and toss so that they are lightly coated with oil and a couple pinches of sea salt and ground pepper. Arrange them onto the baking sheet in a single layer. and allow to bake, tossing occasionally, until well browned, about 20 minutes. 

If you're feeling adventurous, you could also add some extra spice to the mix when adding the salt and pepper... chopped fresh rosemary and thyme come to mind, maybe with a little mayo for dipping;) 

Serve hot!
